TASTING NOTES
COLOUR: Deep, dark red with Blue tinge
AROMA: The nose is layered and dense with earth, dried bouquet garni and a lovely smokiness. With time the aromas evolve and blossom with liquorice, graphite, black olive tapenade and the sporadic waft of fresh picked blueberries and black fruits.
PALATE: The palate is tightly wound with medium body and oodles of power! Black fruits and olive tapenade fight for dominance with clove and dark chocolate in support. A core of tannin and acidity ensure length and intrigue.
CELLARING: My style of winemaking and the quality of the fruit that made this wine will reward cellaring of 7 - 15 years.
The fruit for this wine was hand harvested off our 2ha Clevedon vineyard over 2 weeks, beginning with our Merlot, Malbec 6 days later and our Cab Franc another 8 days after that. The Merlot and Malbec were de-stemmed to an open top fermentor and the Cab Franc hand de-stemmed and added to the same tank as whole berries. By the time the Cab Franc was added the wild ferment was well underway. The wine spent a total of 23 days on skins with 1 plunge per day only before being pressed to 100% French oak, 50% new.
